Pinot Noir works to perfection with pheasant and mallard.

Partridge and grouse need a smidgeon more body, so a wine from Rioja or Tuscany might be the obvious choice.

Venison and traditional roasts need the depth and character of a Cabernet Sauvignon or rich Merlot.

Then we have hearty stews, cassoulets, and pies. A touch of Syrah, Malbec, or Zinfandel might be the solution here.
